Sentinel Farms has raised cattle in Starksboro since 2005. We are updating the way our beef program is presented so that every offering is clear about ownership, inspection, processing, and personal-use requirements.
Our cattle are raised on grass and browse according to our farm practices. We keep animal-care and feeding records and use specific product claims only when they can be supported and, where required, approved.
Inspected Beef
When Sentinel Farms offers packaged beef, individual cuts, beef boxes, or other meat for sale, the product will come from animals slaughtered and processed under the inspection required for that sale.
This is the straightforward option for customers who want to purchase beef as beef.
Availability varies by harvest and processing schedule.
Live Cattle Ownership Shares
A separate option is being developed for households that want to purchase a documented ownership interest in a live animal before slaughter.
Under a custom-exempt path, the resulting meat is for the owners’ personal household use only. It is not meat offered for sale and is marked NOT FOR SALE.
Final program terms will be confirmed with the Vermont Agency of Agriculture before enrollment opens.
How a Live-Animal Ownership Share Works
- Ownership is established while the animal is alive. Each purchaser has a documented fractional interest in a specific animal.
- The purchase price is based on the live-animal ownership share, not hanging weight.
- All owners complete the required ownership documentation before slaughter.
- The animal is delivered to a licensed custom slaughter/processing facility.
- The resulting meat is returned only to the animal’s owners for their personal household use and is marked NOT FOR SALE.
A cattle ownership share is separate from Unbound Grace membership. A membership fee does not purchase, earn, or entitle a member to uninspected meat.
Processing, Cutting & Pickup
Processing details depend on the program selected. Inspected beef is packaged and labeled for legal sale. Custom-exempt cattle-share meat is processed for the documented owners and is not for resale or barter. Cut instructions, processor charges, pickup or delivery arrangements, and expected timing are provided before an order or ownership share is finalized.
